Nut and Seed Bread

Ingredients

5 cups of raw nuts (I’ve tried macadamias and pecans and cashews so far. All worked great) 

2 cups of raw seeds (I’ve mixed pumpkin, sunflower and flax seed)

1 cup of unsweetened shredded coconut

5 eggs

⅓ cup of oil (I’ve used avocado or olive oil) 

2 grated apples

1 cup of chopped raisins or dates

1 cup of grated carrots 

2 tsp of cinnamon

1 tsp salt 

Preparation

  1. Roughly chop up nuts or pulse in a food processor
  2. Place nuts in a bowl and add seeds, coconut, apples, salt, cinnamon and carrots, mix well
  3. Beat eggs and add oil into the egg mixture
  4. Add eggs to the nut and seed mix, combining well
  5. Bake at 325F for 1 hour
  6. Allow bread to cool before slicing
