Ingredients
5 cups of raw nuts (I’ve tried macadamias and pecans and cashews so far. All worked great)
2 cups of raw seeds (I’ve mixed pumpkin, sunflower and flax seed)
1 cup of unsweetened shredded coconut
5 eggs
⅓ cup of oil (I’ve used avocado or olive oil)
2 grated apples
1 cup of chopped raisins or dates
1 cup of grated carrots
2 tsp of cinnamon
1 tsp salt
Preparation
- Roughly chop up nuts or pulse in a food processor
- Place nuts in a bowl and add seeds, coconut, apples, salt, cinnamon and carrots, mix well
- Beat eggs and add oil into the egg mixture
- Add eggs to the nut and seed mix, combining well
- Bake at 325F for 1 hour
- Allow bread to cool before slicing
